Mushroom Pate.
(For 12)

Ingredients.

9 oz mushrooms.
1 onion
3 oz butter
1 oz bread crumbs
3 oz cheese
1 oz cream
nutmeg
1 tsp Gelatine.
1 tbsp dry sherry.

Method.

1.. Gently fry 6 thin slices of mushroom then place in bottom of greased dish.

2.. Dissolve Gelatine in 2 tbsp of hot water then add sherry and pour over mushrooms, leave to set.

3.. Fry chopped onion in butter for 5 minutes, add chopped mushrooms and fry for another 5 minutes, then add Bread crumbs.

4.. Grate cheese, mix with cream add to mushroom mix, season and puree

5.. Place carefully in bowl over mushrooms and chill for at least 4 hours.
