Carrot and Orange Soup
(Produces 3 pints for 6 people.)

1 oz butter.
1 ½ lbs carrot's
½ lb onions.
2 pints chicken stock. (3 stock cubes.)
1 orange.


1.. Melt butter in pan, add pealed and sliced carrots and onions. Cook gently for 10 minutes till slightly softened.

2.. Add stock, bring to boil and simmer covered for 40 minutes.

3.. Liquidise vegetables and stock and push through a sieve.

4.. Add grated rind and juice of orange to the soup.

5.. (If ready in advance cool and store in fridge till needed then) return to boil and serve.
