Carrot and Orange Soup
(Produces 3 pints for 6 people.)
|
1 oz butter.
2.. Add stock, bring to boil and simmer covered for 40 minutes. 3.. Liquidise vegetables and stock and push through a sieve. 4.. Add grated rind and juice of orange to the soup. 5.. (If ready in advance cool and store in fridge till needed then) return
to boil and serve.
