Pears in spiced sponge.
(For 6)

3 ripe pears.
1 cinnamon stick.
4 cloves.
½ pint white wine.
1 tbsp honey.
4 oz butter.
4 oz brown sugar
2 eggs.
6 oz S. R. Flour.
1 tsp powdered ginger.

1.. Peel, core and half the pears, place in pan with cinnamon, cloves, wine and honey. Simmer gently for 30 minutes till the pears are soft but not mushy.

2.. Reserve the liquid and place pears in an oven dish with 2 tbsp of liquid.

3.. Boil liquid to reduce by ½ to 2/3s

4.. Cream together the butter and sugar, add beaten eggs slowly. Mix flour and ginger and fold in. Add reserved liquid until you have a dropping consistency.

5.. Spread mixture of top of the pears. Bake in oven at 180 C, gas mark 4, for 45 minutes until the top is crisp and golden brown.
